I'm getting ready to go to LA on Thursday to train with Hemalayaa (ahhh scream gasp sigh...soooo excited!) and we've had a few malfunctions which I'm choosing to believe are for the best. Aka our housing fell through and we are now looking for a new spot! Ill post when we get the new one..lets see what the universe delivers!?!? So anyway the kids and I made some carrot apple juice today and had a TON of pulp leftover, we gave half to the chickens but still had plenty left so I decided to make these carrot cake Ish mostly raw cookie bar heart things. They are in the dehydrater right now but I know they will be yummy cause the batter was delicious (my daughter picky carb girl affirmed this judgement as well). I thought you all might want the" recipe" but I really should just call it an inspiration cause we didn't measure and I'm sure you could adjust this many ways. Part one of the "recipe" Buy a huge bag of juicing carrots! Juice Em up, drink and share the juice! Juice a few apples to (help get the juice in the kids). In a large mixing bowl mix some hemp powder, I also added some other vegan protein powder super food stuuf. I then added cinnamon, ginger, cardamom, flax seeds and some Celtic sea salt. This was the "flour" part. Then I had my daughter pit and chop some dates and stone some apricots. We threw these in the blender with some maple syrup, coconut sugar and some leftover carrot juice (son the protein monster didn't finish his). We blended this all up and it was the wet portion. My sweet boy chopped up walnuts and pecans. We then added all the ingredients together and mixed well, my lovely daughter decided to use her hands and squish it through her fingers :-) We adjusted ingredients untill it was a workable texture aka able to be clumped into a ball. We then did the ole taste test and yum yum it was done so we used heart shaped cookie cutters and put them in the dehydrater at 105 f. They will stay in overnight and we will check them in the morning. I loved not wasting the pulp or turning the chickens eggs orange from to much carrots. Plus I can bring them to LA with me and leave some with my momma and kids. A little love all around :-) Till next time, namaste!
