Phew that was a mouthful...haha (pun not intended initially but now... totally intended).
I made this right before teaching this mornings Shaktiveda Awaken Your Spine class. It needs at least 45 mins to set up, I prefer longer..much longer. But I needed to eat so I could fulfill the energy requirements of giving three massages and raising children! This was super yummy and one of my favorite recipes so far. And easy..damn it was mega healthy too! What's not to love?!?
On with the recipe already!!!
Strawberry cardamom Coconut Chia seed pudding
~*~1 individual serving coconut yogurt (I think I got mine at trader joes can't remember)
~*~4 ounces of coconut milk (approx.. Hey I don't measure ok!)
~*~ 2 to 3 tbls of chia seeds (wing that shite!)
~*~cardamom to your liking (looks like bout 1/4 teaspoon to me)
~*~ splash O vanilla extract
~*~ big handful of strawberries (bout 6)
~*~ sweeter to taste (I used agave syrup)
So mix everything (except the strawberries and sweetener) together very VERY well!
Let it sit (I left mine out cause I'm working on balancing my Vata and gotta have stuff warm or at least room temp). If you have a fiery personality then you could refrigerate yours.
After its sets up for at least 45 mins (it will stay good in fridge for at least 3 days), then slice your strawberries and put them on top and then add your sweetener...I just drizzled the agave on top!
So yummy, filling and gave me endurance, I wasn't hungry for 5 hours!
