So...If you are a yogi who is committed to Ayurveda then you know that crisp rice is vata aggravating.... Therefore vicariously rice crispy treats are too :( I KNOW! It's aggravating!! (My vata) Ha! So I been dreaming up an Ayurvedic friendly version... Granted it would be even better if I made it into a warm rice pudding dish... I'll try that next! I wanted the recipe to have some of the crunchy chewy texture that rice crispy treats have so here is what I came up with! ~*~CocoChia Crispy Treats~*~ 1/2cup each chia seeds, milk (I used almond but what ev u like), dash Of vanilla, sliced almonds, sesame seeds. coconut flakes, coconut oil or coconut mana or a combo of the two, hemp seeds and maple syrup or soaked dates and 2 packets/teaspoons stevia) So first you soak the chia seeds in the milk with the vanilla and stevia. This is the marshmallow base, then you mix all the dry ingredients (hemp seeds, almonds, coconut flakes, sesame seeds). Then mix either the half cup of blended dates or the maple syrup or honey whatever you got in with the chia marshmallow blend. Then mix wet and dry ingredients together and press into a coconut oiled pan. Refrigerate till it is setup! And enjoy! My son loved them and so did my dad! Both of which are not the easiest to please when it comes to the healthy stuff! Let me know how it worked for you and if you have any variations. Peace, Love and light! Amber
