Devil Horn Lettuce Wraps

Say What?

I couldn't think of anything else to call Em!

So it was Mommas day today and we were out running around all day. I taught Sunday School today (actually its Religous Education class cause we are Interfaith at the UU), then we got some brunch, then we went to the MALL!

WTF?

Actually we went there for two reasons...
1: My honey loves the knife store (he's a ninja)
2: Hot Topic has a monokini Wonder Woman swimsuit!!! Omg I want it soo much!!My honey likes "to study the indigenous mall lemmings in their Artifical habitat, in order to gain information on said subspecies"

Well after that fiasco I was desperate for wide open spaces! So we swing by the house did a few quick chores, grabbed our suits and headed out for a swim!

While swimming my daughter saved a baby birds life! It feel into the water, she scooped it up and wrapped it in her towel. It was big enough that it had its "real" feathers but still kinda small. She wanted to keep him but it seemed like he would be fine, so we put him in the sun to warm up and wait for his momma to come get him.

Time passed all to quicky wiith all that excitment and the launching of my 9 and 10 year old off my shoulders (while dodging my sons requests to "ride my back to victory" he likes when I pretend to be a mermaid and he sits on my back) suddenly I realized it was 6:30 I was supposed to have fed my children dinner before I dropped them off at the X husbands house.
Kids wanted burgers and I wasn't very hungry (yes I'm almost to the whole point of the blog...the "recipe") so we went to a local joint that I felt was relativly acceptable food to fed my lovely little ones.
Of course on the drive there I began to get a little hungry.
Every one got the burger and fries combo except me. Being on that vegan liver cleanse diet for a month kinda ruined me for "regular" food.
So I ordered some sweet potato fries, thinking it was probably the healthiest choice for me.
Something still didn't feel right about just eating sweet potato fries, so I grabbed some lettuce leaves from the burger condiment bar and some of this bomb chipotle spread they had.
I just wrapped the fries in the lettuce and put some sauce on them. I have to say it was satisfying and damn good! I'm well aware that this was not "the healthiest best dinner ever" but hey it was the lesser of two evils and that my lovelies is why I have named my creation devil horn lettuce wraps!

If you ever find your health seeking self in a predicament such as this may the lesser of two evils fulfill you and amuse you. Life is short and a little party cake with the dark side is necessary sometimes.
