This recipe is from LIVING CUISINE by Renee Loux Underkoffkler. It is a great recipe for spring and wonderful for balancing pitta and kapha doshas. This is a great appetizer and for vata dosha make sure to eat a warm moist meals with it!
Ingredients 1 1/2 cups cilantro leaves 2 cups petite peas 1/4 cup of lime juice 1 tablespoon lime zest 1-2 tablespoons olive oil 1 teaspoon fresh ground black pepper 1teaspoon sea salt 1 jicama, peeled and sliced 1 pint quartered fresh figs Process first 5 ingredients, not till smooth, just blended. Season with salt and pepper to taste. Spread 3-4 tablespoons pea mole on each jicama slice. top with three or four fig quarters. Oh my this is sooo yummy!! When summer comes I will post another one of my fav recipes from her...Tomato summer stacks. Stay tuned till tomatoes are in season...or by her book..it's worth it! Ps, today is earth day.
